I had the opportunity to meet the kind, humble food allergy-friendly author and chef Cybele Pascal at the food allergy summit in NYC earlier this year. As we talked about our passions over dinner, she shared with me that her new line of Cybele’s Free to Eat Cookies would be coming out soon. I was excited for her and wished her the best, but secretly I was hoping I could get my hands on some sooner than later and prayed that they would be delicious. 🙂
When I heard they were at Whole Foods a couple of weeks ago, my kiddos and I made a special trip to check them out. They loved hearing the story about how I met Cybele on my trip to New York and were excited to hear the cookies are entirely free of the top 8 allergens. My daughter Avery has severe food allergies to eggs, milk, peanuts, tree nuts and shellfish – so buying store-bought food is not very easy and most cookies on the market are not safe for her to eat.
There are 3 flavors of the new Cybele’s Free to Eat cookies: chocolate chip, chocolate chunk brownie and oatmeal raisin. We loved all of them, but the chocolate chip and oatmeal raisin were our favorites. We ate them much more quickly than we should have. My kiddos said the chocolate chip cookies are even better than the other two milk and egg-free brands we usually buy. I have to say I agree with them.
Kudos to Cybele for making such great cookies available for people living with food allergies and sensitivities. And for being such a dedicated and positive advocate in the community. To learn more about Cybele, her cookbooks and recipes, check out her web site.
